Fish Risotto

Approximate nutrient content per serving (293g):



  • 240ml of Ensure® Compact Vanilla
  • 1 cup of uncooked brown rice
  • 1 can condensed Cream of Mushroom soup (295g)
  • 1 can condensed Cream of Chicken soup (295g)
  • 1 packet of Onion Soup Mix
  • Skimmed milk (120ml)
  • Water (250ml)
  • Fresh Cod Fillets (900g)
  • 1 tablespoon of parsley, finely chopped
  • 1 tablespoon of dill, finely chopped


  1. Preheat the oven to 170°C / 325°F / Gas Mark 3
  2. Grease a 22 x 33cm baking dish
  3. Sprinkle the uncooked rice over the bottom of the baking dish
  4. In a saucepan, heat the cream of mushroom soup, cream of chicken soup, Ensure® Compact, skimmed milk and water until the mixture is creamy and hot (do not boil)
  5. Pour the heated soup mixture over the rice
  6. Sprinkle the onion soup mix over the top
  7. Cover and bake for 2 hours
  8. After 2 hours uncover the mixture and place the fish fillets on top
  9. Sprinkle the parsley and dill over the fish
  10. Cover and return to the oven for a further 30 minutes
  11. Serve with a slice of lemon to garnish
