Bailey’s Cheesecake

Approximate nutrient content per serving (175g):



  • 2 packs of Ensure® Plus Crème Vanilla (250g)
  • Butter (100g)
  • Digestive biscuits, crushed (250g)
  • Cream cheese (350g)
  • Bailey’s® Irish Cream (50ml)*
  • Icing sugar (100ml)
  • Double cream, whipped (300ml)


  1. In a medium saucepan, melt the butter on a high heat
  2. Add the digestive biscuits and mix together, using a wooden spoon
  3. Line an 18cm baking tin (one with a removable bottom) with greaseproof paper
  4. Place the biscuit mixture in the baking tin and flatten down with the palm of your hand
  5. Place the biscuit base in the fridge to set
  6. In a large mixing bowl, beat together the Ensure®Plus Crème, cream cheese, Bailey’s® and icing sugar, using a wooden spoon
  7. Gently fold in the cream and pour over the cooled biscuit base
  8. Cool in the fridge for at least 2 hours before serving
