Chicken Risotto

Approximate nutrient content per serving (277g):



  • 1 bottle of Ensure® Plus HP Vanilla (200ml)
  • 1 cup of uncooked brown rice
  • 1 can condensed Cream of Mushroom soup (295g)
  • 1 can condensed Cream of Chicken soup (295g)
  • 1 packet of Onion Soup Mix
  • Skimmed milk (120ml)
  • Water (250ml)
  • Raw boneless, skinless chicken breast (900g)
  • 1 tablespoon of parsley, finely chopped
  • 1 tablespoon of dill, finely chopped


  1. Preheat the oven to 170°C / 325°F / Gas Mark 3
  2. Grease a 22 x 33cm baking dish
  3. Sprinkle the uncooked rice over the bottom of the baking dish
  4. Cut the chicken breasts into strips and arrange on top of the rice
  5. In a large saucepan, mix the cream of mushroom soup, cream of chicken soup, Ensure® Plus HP , skimmed milk and water together until the mixture is creamy
  6. Heat (do not boil)
  7. Pour the heated soup mixture over the chicken and rice
  8. Sprinkle the onion soup mix over the top
  9. Cover and bake for 2½ hours
  10. Garnish with parsley and dill and serve
