For the pastry:

  • Plain flour (200g)
  • Pinch of salt
  • Butter (100g)
  • Water (120g)

For the filling:

  • 1 bottle of Ensure® Plus Vanilla
  • Ham or chicken, chopped (360g)
  • Swiss or cheddar cheese, grated (200g)
  • Spinach, shredded (285g)
  • 1 small onion, chopped
  • 3 eggs
  • Mayonnaise (70g)
  • 1 teaspoon of oregano


For the pastry:

  1. Preheat the oven to 180°C / 350°F / Gas Mark 4
  2. In a large bowl, sieve together the flour and salt
  3. With a knife, cut the butter into small cubes
  4. Work the flour and butter with your fingertips until a breadcrumb texture is formed
  5. Add water, small amounts at a time, until a firm dough is formed
  6. Roll out onto a floured surface, until the pastry is approximately 1 inch thick
  7. Place in a baking tray and trim the sides
  8. Bake in the oven for 8-10 minutes

For the filling

  1. In a medium bowl, mix together the meat, chicken, cheese, spinach, onion and oregano
  2. In a small bowl, whisk together the eggs, mayonnaise and Ensure®Plus
  3. Combine the Ensure®Plus mixture with the meat and cheese mixture and thoroughly mix
  4. Pour into the pastry case and bake for 50 minutes or until a knife inserted into the quiche comes out clean
  5. Leave to stand for 10 minutes before serving

Tip: This meal can be cooked in bulk and frozen
