Roasted Sweet Potato Mash

Ingredients:

  • ½ pack of Ensure® vanilla (125ml)
  • Sweet potatoes, peeled and cut into 1 inch pieces (680g)
  • 1 large apple, peeled, cored and cut into pieces
  • 2 teaspoons of fresh ginger, grated
  • One cinnamon stick or ¼ teaspoon of ground cinnamon
  • ½ teaspoon of salt
  • 1 teaspoon of vegetable oil
  • Water

Method:

  1. Preheat the oven to 200°C / 400°F / Gas Mark 6
  2. In an oven proof dish, toss together the sweet potato, apple, ginger, cinnamon, salt and oil
  3. Bake in the oven for 20 minutes, stirring occasionally
  4. Bake for a further 15-20 minutes or until the sweet potato are soft and slightly caramelised. (If sweet potato are sticking to the dish, carefully add a few tablespoons of water)
  5. Transfer the sweet potato mixture to a large mixing bowl
  6. Add the Ensure® and mash until smooth
  7. Serve immediately

Serving suggestions:

  • Top with sour cream and spring onions
